panna cotta what?



When I say "panna cotta" most of the time the answer here in Uk will be "what?".
Panna cotta it's one of the classic Italian dessert that you have to try at least once in your life. Milk, double cream and gelatin are the main ingredients, add your favorite flavors and your fantasy and voila' panna cotta will be in your fridge.
For this recipe I used blueberry yogurt as well to give an intense berry flavor and elderflower cordial (one of my favorite English thing!).



Elderflower and b. berries panna cotta

Ingredients:

150g double cream
100g yogurt
100ml whole milk
50ml of elderflower cordial
100 caster sugar
4g gelatine

for the sauce:
180g blackberries and blueberries
100g caster sugar
80ml water

Leave the gelatine soaking in water for few minutes until soft. Meanwhile bring almost to boil the milk, cream and sugar. Squeeze the water out of the gelatin and add the gelatine and stir well until disappear. Leave the mix cold down for few minutes and then add the yogurt and the cordial, stir well. Pour your mix in your ramekins chose for the occasion and put in the fridge for few hours, until set.
For the sauce, place the sugar and  water into a pan and bring to the boil, simmering until the sugar has dissolved. Add the berries (leave few for the decoration) and blend the sauce until smooth.
